Duck Salad with Green Beans & Honeyed Almonds
Duck breast is marinated in salt, chili powder, cumin and cinnamon, then roasted. Served with a watercress and green bean salad tossed with a lime, garlic and olive oil dressing and topped with honeyed almonds.
Pork Scaloppini with Lemon, Capers and Arugula
Pork tenderloin is lightly pounded and pan seared, served with a sauce flavored with olive oil, garlic, lemon zest, capers, and parsley, topped with arugula.
